Why not jazz up your usual recipe by adding 6 heads of elderflower per 6lbs of gooseberries? Both should still be readily available during July.
The elderflower heads will need washing and putting in muslin before being cooked with the gooseberries. After cooking, remove the elderflowers and squeeze them out before adding sugar.
You’ll find the result more fragrant and a little sweeter than a standard gooseberry jam. Happy cooking!
